Gluten Free Chocolate Chip Protein Cookies

The best part about this recipe is that it is

really quick to make because it is made with gluten free protein pancake mix which is awesome! Plus you can double or

triple the recipe and freeze them...they freeze really well!

I also love the fact that they are made with better ingredients like grass fed butter, unsweetened applesauce and banana so you can actually have a nice little treat everyday if you wanted to!

What you need for approximately 30 Tbsp. size cookies:

Preheat oven to 350 degrees

2 Tbsp. Unsweetened Apple Sauce

1/4 tsp. Baking Soda

1/4 tsp. Baking Powder

2 Tbsp. Grass Fed Butter softened not melted

1/4 Cup Heaping of Lily's Stevia Chocolate Chips

1 tsp. Vanilla Extract

1 Cup Gluten Free Rolled Oats

1 Cup plus 2 Tbsp. Flapjacked Gluten Free Pancake Mix

1 Large Banana mashed

Mix all of your dry ingredients together in a medium sized bowl except the chocolate chips.

Mix all of the wet ingredients in a larger bowl.

Add the dry to the wet a little at a time until all incorporated.

Stir in the chocolate chips. You can also add dried fruit, nuts, different flavored chips...the possibilities are endless!

Line a cookie sheet with parchment or a baking mat, measure out 1 Tbsp. size cookies and cook approximately 8 to 10 minutes until just barely golden brown.
